2 cups mango, diced (fresh/tinned)
1 cup onion, chopped
1 tablespoon ginger, grated
1 tablespoon garlic, chopped
2 tablespoons cider vinegar
1 chilli, deseeded and chopped (optional)
½ cup mango juice
Description
Whiz the ingredients and one cup of mango in a food processor and then combine with unprocessed mango.
Pour over chicken and marinade for 2 hours.
Bake for 40 – 50 minutes at 220°C until golden and the chicken is cooked.
