MANGO, LIME & LEMON GRASS POPSICLES
- 2 mangoes, peeled and chopped
- 1 cup water
- ½ cup white sugar
- Juice and zest of 2 limes
- 2 sticks lemongrass, chopped
- Make a simple syrup by placing the water, sugar, lime juice, zest and lemon grass in a small saucepan, and bring to the boil. Reduce heat and simmer for 10 minutes until reduced by ⅓. Strain and cool.
- Blend the mango with the sugar syrup. Pour into moulds and freeze.
