SPICY TROPICAL MANGO GAZPACHO
- 2 cups V8 vegetable juice
- 2 cups Mango juice
- ½ cup fresh or tinned mango, chopped
- ½ cup cucumber, deseeded, chopped
- ½ cup red pepper, deseeded, chopped
- ½ cup yellow pepper, deseeded, chopped
- 2 spring onions, chopped
- 2 tablespoons coriander, chopped
- 1 large splash Tabasco sauce
- Combine all ingredients in a food processor, and pulse 4 times until combined, check seasoning.
- Serve well chilled garnished with extra mango chunks.
