SPICY TROPICAL MANGO GAZPACHO

Recipe

  • 2 cups V8 vegetable juice
  • 2 cups Mango juice
  • ½ cup fresh or tinned mango, chopped
  • ½ cup cucumber, deseeded, chopped
  • ½ cup red pepper, deseeded, chopped
  • ½ cup yellow pepper, deseeded, chopped
  • 2 spring onions, chopped
  • 2 tablespoons coriander, chopped
  • 1 large splash Tabasco sauce

Description

  1. Combine all ingredients in a food processor, and pulse 4 times until combined, check seasoning.
  2. Serve well chilled garnished with extra mango chunks.
