SPICY TROPICAL MANGO GAZPACHO
2 cups V8 vegetable juice
2 cups Mango juice
½ cup fresh or tinned mango, chopped
½ cup cucumber, deseeded, chopped
½ cup red pepper, deseeded, chopped
½ cup yellow pepper, deseeded, chopped
2 spring onions, chopped
2 tablespoons coriander, chopped
1 large splash Tabasco sauce
- Combine all ingredients in a food processor, and pulse 4 times until combined, check seasoning.
- Serve well chilled garnished with extra mango chunks.
